I'm using CentOS, based on RHEL 4.2. In my menu, it's

   System > Network > (dialog)

Select the device, then look for a tab marked "Wireless Settings" 
somewhere in the dialogs. It tends to be in different places based on 
what particular sort of RH product you are using.
