Well, your messages are actually in multipart/mixed format.  Perhaps
Stephen's mail client thinks it is an empty body with multiple
attachments.  My client (Thunderbird 0.5 on Windows with Enigmail
installed) displays the message like normal, but also shows two
attachments to the message (signature.asc and Part 1.2)

This message is signed as well, but it's just done with a marker at the
beginning of the message, and a signature at the end.  If the recieving
client doesn't understand the signature block, it just displays as plain
text.

So I guess it's a combination of the configuration of Tim's email client
~  and Stephen's mail client (though both are Evolution if the headers
are to be believed).
